Ageing on the lees
From 36 to 48 months.
Persistent foam, perlage consisting of minute bubbles. Pale straw in colour with greenish tinges. Complex, highly refined nose with luscious fruity notes of citrus and peach. Dry, pleasantly crisp on the palate with a good, well-balanced structure.
Matching with food
Excellent as an aperitif and with deep-fried prawns or scallops in Marsala sauce.
